Dimsumming: quite an experience!

Dim Sum are small dishes of Chinese cuisine, also called the tapas of China. In Hong Kong, “dim summing” is popular: it’s not just about eating the dishes, but also the experience around them. “People enjoy the dishes at any time of the day, such as during breakfast, lunch, dinner or just in between with tea or drinks. It’s a social affair that revolves around enjoyment and conviviality. And we wanted to bring that experience to the Netherlands!” says Jennifer enthusiastically.

Switching to the consumer market

“After my father established his second restaurant, Treasure, the demand for culinary delights from various Chinese cuisines continued to grow. Thus was born the production company, which supplies fresh frozen dishes to various catering establishments, through wholesalers. The idea of entering the consumer market was already there, but gained momentum at the hands of the Corona crisis.”

After careful market research among consumers, the platform Dimsummen.nl was created. Here, consumers can directly order their Dim Sum box, with dishes, steaming baskets, tea flavors and sauces for two people. People can thus enjoy fresh Dim Sum within 30 minutes. “We prepare the Dim Sum from daily fresh ingredients, steam it and then freeze it. For optimal quality maintenance, it is therefore important to transport and deliver the Dim Sum frozen,” Jennifer explains.

Fast turnaround and good service

Logistically, (frozen) delivery to wholesalers is very different from direct delivery to consumers. The search for a suitable solution began. “To get advice on frozen shipping of Dim Sum boxes, I approached several companies. I quickly noticed that companies and suppliers prefer to spend their time with customers who come directly with large quantities. However, as newcomers to the consumer market, we didn’t have a large customer base from day one, and so then you pay top dollar per frozen delivery.”

When Jennifer got in touch with Coolpack, however, she found that they were immediately responsive. “I actually got a response to my request right away. They were very thoughtful with me and the switchover was extremely fast. I was sent a number of products to try out.” says Jennifer.

The right means of transporting frozen food

Initially, Jennifer was looking for EPS boxes, to properly insulate the shipments. “And in terms of refrigeration, I considered several alternatives. Using freezer vans is costly and the capacity cannot be fully utilized. I also prefer not to use dry ice, especially in connection with consumer safety and the relatively short shelf life. Coolpack therefore advised me to use gel packs filled with a specific cooling gel.

The refrigerated filling of gel packs can reach a temperature of -21 degrees Celsius. So it is ideal for transporting frozen goods, such as the dishes in the Dim Sum box. “A period of testing began for us. We noticed that under our transport conditions, the gel packs were still ice cold and hard after 24 hours. After 48 hours, the hardness had decreased, but the temperature inside the pack was still adequate. By ensuring that enough gel packs are included in shipments ánd leaving as little room for air as possible, our Dim Sum boxes arrive fresh to our customers. At a relatively low price!”
